The way we look at food has changed dramatically. Vegetarian and flexitarian lifestyles, the protein transition, local and sustainable food, fish from our own North Sea—many developments are shaping today’s food landscape. As a chef with a strong sense of responsibility, I feel deeply committed to these changes and dedicate my experience and expertise to them.
Initiatives such as the recognition by Eurotoques (founded by Paul Bocuse), my involvement with the Slow Food initiative Cittaslow, and the establishment of NorthSeaChefs Nederland in collaboration with the Nederlands Visbureau are particularly close to my heart.
